I was going to use a friends mig to repair the floor but now I’m considering using some sort of adhesive.. What is the best stuff for this? I want to repair it in a way that the rust won’t come back for a long time, ie I want their to be no crevices for water/salt to get in.

The floor pans and trunk floor are structural components that help hold the car together AND bolted to the frame so YES you will need to weld them in properly. Get the car on jack stands supported at least 4 places under the frame so everything remains stable while replacing the pans.
